Matt's Mussels with Ouzo
Start with a couple pounds of fresh mussels and wash to get any sand off them. Sauté chopped garlic, onions and chopped parsley in olive oil and/or butter. Thrown in a cup of chicken broth(or water), salt, pepper, sweet paprika, a can of rotel or diced tomatoes, canned or fresh, a cup of wine (yes even Retsina) and a shot or two of ouzo and bring to a boil. Throw in the mussels and cover for about 4 minutes. It is ok to open it and stir once
or twice.
When they open taste one. You will know if it is done, unless you have never had mussels before in which case maybe you should make something else.
