INGREDIENTS :
2 Pounds strained whole fat Yogurt
2 large cucumbers peeled and finely grated
2 cloves garlic pressed
7 tablespoons olive oil
3 teaspoons of vinegar
METHOD :
Start by dehydrating the cucumbers. Cucumbers are 95% water so the water must come out. Otherwise your Tzatziki will be very watery. The easiest way to get the water out of your cucumber is by placing your grated cucumbers in a cheese-cloth or a large piece of toule. Add a generous amount of salt and let the cucumbers and salt that has been tightly twisted and squeezed with the cloth or to sit in strainer for a few hours. Over night is even better.
In a bowl combine all the ingredients together well until smooth. Taste to see if you want your Tzatziki with little more garlic or salty or vinegar.
Put it in a refrigerate at least for one hour ...and after is ready for serving
